Two Waffles with Orignal Masala & Mint Chutney

Two Waffles topped with about 1 1/2 cups of the roasted vegetables Spinach , Zucchini & Mushroom is a perfect serving size for dinner. You can add Salad also. I added an Empanada too, stuffed with Spinach and Zucchini.
This is all gluten free & Vegan.
Ingredients
@bebesallnatural Original Masala
@bebesallnatural Mint Chutney
1 small onion chopped
2 tablespoons olive oil
1 pound Mushrooms sliced
1 teaspoon Garlic minced
2 cups BVaby Spinach
1 zucchini.
Sea salt and ground pepper to taste

Add to  saute pan over medium-high heat, olive oil then add onions. Stir to coat. Cook until well-browned (caramelized) being careful to not burn them. 
Then add Mushrooms , zucchini and spinach with minced garlic & cook well . 
Warm Empanada in an pan.
